Baked Steelhead

Serves: 4 servings
- ¼ cup extra virgin olive oil
- juice of 2 small limes
- a few small garlic cloves, about 1 tsp. chopped
- 1 tsp. sumac (optional)
- Italian parsley, a little less than an ounce or ¾ cup very roughly chopped
- steelhead fillet, 2 #
- salt and pepper to taste
- Preheat oven to 450 F.
- Combine first five ingredients in a food processor.
- Process until the parsley is finely chopped and integrated with the rest of the ingredients.
- Cover a baking sheet with aluminum foil.
- Place steelhead fillet on the foil.
- Spread topping on the fillet.
- Bake for about 12 minutes.
- Fish is done when it is pale and flakes through, you can check with a fork.
