Fig-Fennel-Pistachio Energy Bites
  • 3 oz. dried Calimyrna figs
  • ½ cup almond butter
  • ¼ cup honey
  • ½ tsp. vanilla powder (or ¼ tsp. extract)
  • 1 tsp cocoa powder
  • ⅓ cup almonds
  • ¼ cup pistachios
  • 2 tsp. fennel seeds
  1. Using a food processor, process the figs into a paste.
  2. Remove the processed ball of fig paste from the food processor.
  3. Add the almond butter, honey, vanilla powder or extract, and cocoa powder, process until fully blended.
  4. Add back in the fig paste and process until fully blended.
  5. Remove mixture from food processor.
  6. Add almonds and pistachios, pulse until chopped.
  7. Combine chopped nuts with the almond butter mixture (I used a standing mixer with the paddle attachment).
  8. Refrigerate the combined mixture.
  9. Roll mixture into small balls by hand.
