Fall Salad with Apples, Walnuts, Dried Cherries and Blue Cheese

A fall salad with a mild dressing and fruit, nuts, and a little blue cheese.
  • Dressing:
  • 3 Tbs. neutral tasting oil such as grapeseed or expeller-pressed canola
  • 1 tsp. champagne vinegar
  • 1 Tbs. maple syrup
  • salt
  • pepper
  • Salad:
  • 1 head red lettuce, washed, dried, and shredded into bite-sized pieces
  • 1 apple, cut into slices
  • handful dried cherries
  • handful walnuts, roughly chopped
  • 2 tsp. artisan blue cheese
  1. Combine canola oil, champagne vinegar, and maple syrup in a small bowl.
  2. Stir together with a fork.
  3. Pour dressing over shredded lettuce.
  4. Add salt and freshly ground pepper to taste.
  5. Serve lettuce onto dinner plates.
  6. Add cherries on top of lettuce.
  7. Add chopped walnuts.
  8. Arrange sliced apples on each salad in a circle.
  9. Finish with small bits of artisan blue cheese.
