A tropics-inspired smoothie from frozen mango and pineapple pieces, unsweetened milk (soy, almond, or other) and coconut.
  • 1 cup frozen pineapple tidbits (from Trader Joe's or homemade)
  • 1½ cups frozen mango chunks (Trader Joe's or homemade)
  • 1 cup plain unsweetened soy or other milk (not vanilla)
  • 1 Tbs. coconut milk (high quality like Thai Kitchen)
  1. Combine all ingredients in Vitamix or other powerful blender, process starting on low speed and gradually increasing speed to high.
