Trader Joe's Kale Waldorf Salad

A kale waldorf salad, dressed with either Greek yogurt honey dressing or a non-dairy yogurt honey dressing, your choice.
Ingredients
  • 1 recipe Greek yogurt honey dressing or non-dairy yogurt honey dressing (see separate posts)
  • 3 oz. kale
  • 4 oz. spinach leaves
  • 6 oz. red seedless grapes
  • scant ½ cup chopped walnuts
  • ¼ cup finely chopped red onion
  • 1 cup chopped celery
  • 8 oz. Fuji apples, cut into small cubes
  • 1 extra small carrot, grated or peeled into long strips with a vegetable peeler.
Instructions
  1. If you are using a bunch of spinach, wash it in several changes of water. If you are using bagged spinach, just wash it once or skip this step.
  2. Wash kale.
  3. Spin dry spinach and kale.
  4. Rip each leaf of kale away from the rib to remove the tough center section. This is optional, but I prefer to do it, especially with some types of kale that have a larger central rib within the leaf.
  5. Chop the kale into bite-sized pieces.
  6. Toss spinach, kale, and about half the recipe of dressing in a large bowl.
  7. Put on dinner plates.
  8. Toss remaining ingredients except carrots in a bowl with the remainder of the dressing.
  9. Top greens with the dressed ingredients.
  10. Top with shredded or grated carrot.
  11. Recipe provides three full-plate portions of salad.
