Shallot Salad Dressing

This shallot salad dressing has a nice oniony snap to it. I’ve listed the cook time as 20 minutes, but that’s really just olive oil sitting in a bowl picking up flavor from the minced garlic and shallot. Start the shallot and garlic marinating in the olive oil earlier and you’ll get even more flavorful results.

Shallot and garlic add some zing to a simple salad dressing.

Ingredients
  • 3 Tbs. olive oil
  • 1 tsp. balsamic vinegar
  • 1 medium-sized shallot
  • 1 clove garlic
Instructions
  1. Mince a medium-sized shallot very finely.
  2. Mince one clove of garlic very finely.
  3. Measure olive oil into a small bowl.
  4. Add minced shallot and garlic to bowl, let sit for at least 20 minutes to infuse flavor.
  5. While 20 minutes will do, longer is better, and you'll have great results starting this the day before or making a larger batch and using it for several days.
  6. To dress salad, add 1 tsp. of balsamic vinegar to a large mixing bowl of shredded greens, toss, then add olive oil/garlic/shallot mixture and toss again.
  7. Alternatively, add vinegar to the bowl of olive oil/garlic/shallot mixture, stir together, and then toss it with the salad.

The olive oil and balsamic vinegar dressing only takes a minute or two to mix and makes the salad delicious. Stay healthy.
