Thierry Rautureau threw out ideas left and right at IFBC: one that stuck with me is this watermelon tarragon drink. I used his suggested ingredients in quantities that worked for me and really like the combo.
I’ve had plain blended watermelon juice lots of times, I find it sweet but bland. Thanks to this recipe I’ve realized that it’s much better with soda water added. I used our SodaStream to make the soda water. Watermelon is great for taming assertive flavors. I love it with arugula but wouldn’t have thought of using it with tarragon without Rautureau. You will have to decide how much is enough tarragon here, I recommend starting with 5 or 6 individual fresh leaves, blending, and then adding more as desired.
I made this for my son and his girlfriend when they came over, I’ve also made a virgin 1/3 batch for just me (1# of watermelon, 2/3 cup soda water, 1/3 cup crushed ice, etc.). It’s good for a party or just for a little snack for yourself, give it a try and let me know what you think!
- 3 lbs. cold watermelon
- 2 c. cold soda water
- 1 c. crushed ice
- 1 tsp. apple cider vinegar
- about 1 tsp. fresh tarragon leaves or to taste (start with 5 or 6 individual leaves and see how you like it, add more if you like)
- add vodka for a cocktail or leave it out for an agua fresca
- Blend all ingredients together in a blender. Adjust with more tarragon or apple cider vinegar or vodka as desired.

This looks so good. I love the combination with the tarragon and apple cider! I experimented with watermelon juice just this past summer and made a wine cooler with it and lime juice, but this looks far more interesting!!

I made a watermelon margarita over the summer and loved it, this also sound tempting and I bet that vinegar gives it a little bite.
