Hot Pepper Spaghetti Squash with Scallions and Artichoke Hearts

Scallions, artichoke hearts, and hot pepper sesame oil perk up this spaghetti squash and turn it into a handy snack or side dish. For more substance, add feta cheese or extra firm tofu. I used Kirkland canned artichoke hearts (from Costco) which are packed in canola oil.

A simple preparation for one using leftover spaghetti squash

Ingredients
  • 6 stalks scallion
  • 4 canned artichoke hearts (oil-packed), about ⅔ cup
  • 2 cups cooked spaghetti squash
  • hot pepper sesame oil or toasted sesame oil and hot red chili flakes.
  • salt
  • black pepper
Instructions
  1. Chop scallions into small rounds. I use the white part and some of the green stalk--- most people use only the white part. Your choice.
  2. Chop artichoke hearts.
  3. Put cooked spaghetti squash in bowl and add above ingredients.
  4. Add several shakes of hot pepper sesame oil, or toasted sesame oil plus a pinch of hot red chili flakes.
  5. Mix with spaghetti squash.
  6. Add salt and a generous few grinds of black pepper.
