Scallions, artichoke hearts, and hot pepper sesame oil perk up this spaghetti squash and turn it into a handy snack or side dish. For more substance, add feta cheese or extra firm tofu. I used Kirkland canned artichoke hearts (from Costco) which are packed in canola oil.

Ingredients
- 6 stalks scallion
- 4 canned artichoke hearts (oil-packed), about ⅔ cup
- 2 cups cooked spaghetti squash
- hot pepper sesame oil or toasted sesame oil and hot red chili flakes.
- salt
- black pepper
Instructions
- Chop scallions into small rounds. I use the white part and some of the green stalk--- most people use only the white part. Your choice.
- Chop artichoke hearts.
- Put cooked spaghetti squash in bowl and add above ingredients.
- Add several shakes of hot pepper sesame oil, or toasted sesame oil plus a pinch of hot red chili flakes.
- Mix with spaghetti squash.
- Add salt and a generous few grinds of black pepper.
