A little spicy from curry powder and turmeric and smoky from pimenton de la vera, these chickpeas are simple to put together and easy to toss on a salad or vegetable. Smoked paprika, or pimenton de la vera, is quite unlike bland regular paprika. It’s roasted over oak logs and has a deep, smoky flavor that enhances casseroles, soups, and vegetable dishes (most famously, paella). Start with my basic chickpea recipe or with canned chickpeas, mix in the spices, olive oil, and salt, and you’re done.

Ingredients
- 2 cups cooked chickpeas (or canned chickpeas, rinsed)
- 1T olive oil
- 1 medium or small clove garlic
- ½ tsp. smoked paprika (pimenton de la vera)
- ½ tsp. turmeric
- ½ tsp. curry powder
- salt
- pepper
Instructions
- Mince garlic, then add both the minced garlic and the olive oil to the chickpeas.
- (If you have extra time, mince garlic, steep in olive oil for 20 minutes, then dress the chickpeas with the mixture.)
- Add spices to the chickpeas and mix.
- Add salt and pepper to taste.
