Pear, Hazelnut and Goat Cheese Salad

Made this simple yet elegant salad with a ripe pear, toasted hazelnuts, and goat cheese the other night and it turned out so well I thought I’d write it up. I had a tiny wedge of Humboldt Fog goat cheese on hand and was glad I did- it’s really good stuff.

Pear, Hazelnut and Goat Cheese Salad

Ingredients
  • For the dressing:
  • 1 Tbsp. champagne vinegar
  • 2 Tbsp. extra-virgin olive oil
  • salt to taste
  • pepper to taste
  • For the salad:
  • 4 oz. salad greens (I used green and red leaf lettuce this time)
  • ⅓ cup hazelnuts
  • 2 oz. soft goat cheese (Humboldt Fog in this case)
  • 1 ripe pear
Instructions
  1. Wash, dry and shred greens.
  2. Dry-toast hazelnuts in a large pan for several minutes, stirring constantly. Remove when they become hot and fragrant and are just starting to brown.
  3. Cool and chop hazelnuts.
  4. Halve pear, core, slice into thin wedges.
  5. Crumble goat cheese.
  6. Combine dressing ingredients with greens in a large bowl, toss.
  7. Serve greens onto salad plates.
  8. Top with chopped hazelnuts, pears, crumbled goat cheese.

Wow that flavour combination sounds absolutely delicious!! I love Goats Cheese on anything and even had it with my brunch this morning 🙂
